Cucumber and mint canapés

Add a little bit of style to your party with these fresh delights that are typical in Campania. Easy to prepare and eat, these canapés are the perfect go-to meal for when you’re expecting guests.

 

 

• 3 large cucumbers, peeled, ends removed, cut into 2cm slices
• ½ red onion, finely diced
• ½ yellow capsicum, finely diced
• ½ red capsicum, finely diced
• 15g mozzarella, cut into very small cubes
• 1 bunch of mint
• 3 tbsp extra virgin olive oil
• Salt and pepper, for seasoning

1. Hollow cucumbers a little with a spoon to use as mini-plates. Set aside in refrigerator.
2. Cook onion and capsicums in butter over low heat.
3. Allow to cool and combine with mozzarella and oil in a bowl. Season with salt and pepper.
4. Cover mixture with cling wrap and leave to marinate in refrigerator for at least an hour.
5. Just before serving, lightly salt cucumber slices. Fill with marinated vegetable mix.
6. Decorate each canapé with mint leaves and serve.
