Fried spiny Sicilian artichoke
I used to prepare this dish for the Feast of Saint Joseph.
• Artichoke plant, thorns removed and divided into pieces
• 2-3 eggs
• 2-3 tbsp grated cheese
• 2-3 tbsp breadcrumbs
• Flour
• Salt
• Pepper
• Pinch of bicarbonate soda
1. Cook the artichoke in salted boiling water. Add a pinch of pepper and bicarbonate soda. Strain and set aside to cool.
2. In a large bowl, beat the eggs. Season with salt and pepper.
3. Add the grated cheese, breadcrumbs and a pinch of flour. Stir until it becomes a smooth batter.
4. Dip each piece of artichoke in the batter and fry until golden brown. Enjoy!
