Guinness gelato

This delicious gelato can be served alone or with other flavours. If you really want to indulge, sprinkle it with chocolate flakes or accompany it with whipped cream to imitate the famous froth that comes with any glass of beer.

 

 

• 350 ml Guinness
• 350 ml cream
• 75g sugar
• 3 egg yolks
• ½ tsp vanilla essence

1. Pour the Guinness into a large pan and bring to the boil.
2. Reduce the heat and simmer until it reduces to 100 ml.
3. Meanwhile, place the egg yolks, sugar, cream and vanilla essence in a stainless steel bowl. Beat the mixture until it thickens and becomes almost white. Set aside in a cool place.
4. When the Guinness has reduced, pour it into a cold container and place it in the freezer until it is completely cooled.
5. Add the Guinness to the ice-cream mixture and stir slowly, then place it in an ice-cream maker. Once complete, your Guinness gelato is ready to taste… or should we say devour?!
