Nonna’s potato dish
My nonna’s recipe from Tarcento, in Udine.
• 1 kg washed potato
• 1 cup parsley finely chopped
• 1 cup grated parmesan cheese
• Salt
• 1/3 cup light sunflower oil
1. Preheat oven to 220°C.
2. Steam the potatoes then mash them in a bowl.
3. Add the parmesan cheese, parsley, salt and oil and mix.
4. Bake in the oven till brown.
