Quinoa and orange salad

Serves 2 as a meal, 3-4 as a side

As the weather gets warmer, try this refreshing and easy-to-make salad at home!

-200g of quinoa
-4 oranges
-4 tablespoons of green olives
-1 avocado
-4 tablespoons of extra virgin olive oil
-2 tablespoons of orange juice
-salt
-pepper
-mint leaves

1. Rinse the quinoa several times, changing the water until it runs clear.

2. Drain it and put it in a pot with 200g of water.

3. Cook until the water is completely absorbed, then let it cool.

4. Peel the oranges and cut them into pieces.

5. Dice the avocado.

6. Combine the quinoa, oranges, avocado and olives, then season the salad with salt, pepper, oil and orange juice.

7. Once ready, sprinkle with mint leaves.
