Ricotta cannoli
A traditional Sicilian sweet that everybody loves.
• 900g ricotta
• 1/2 cup icing sugar
• 2 tbsp Marsala
• 1/4 cup chopped dried figs or fig jam
• Chocolate bits
• Pistachio nuts (optional)
• 24 cannoli shells
1. Soak dried figs or fig jam in Marsala.
2. Whip ricotta in electric mixer until smooth and light.
3. Add sugar and beat a little more.
4. Fold in fig and Marsala mixture and chocolate bits.
5. Using a piping bag, fill shells and coat ends of cannoli with pistachio nuts.
6. Dust with icing sugar and serve.
