Roasted San Marzano tomatoes with buffalo mozzarella

This simple yet tasty recipe brings out the best of the famous San Marzano tomatoes. Quick and easy to make, this dish is the perfect starter to a dinner with friends, or a lunchtime main during summer.

 

 

• 6 San Marzano tomatoes, halved
• 6 small buffalo mozzarella balls (or fior di latte), halved
• ½ cup capers
• 1 cup breadcrumbs
• 1 garlic clove, chopped
• Oregano, to taste
• Grated grana padano (or parmesan), to taste
• Extra virgin olive oil, as needed
• Handful of fresh basil, chopped
• Salt and pepper, for seasoning

1. Preheat oven to 180°C.
2. In a large bowl, combine breadcrumbs, garlic, capers, oregano and cheese. Season with salt.
3. Stuff each tomato halve with some breadcrumb mixture, fresh basil and a mozzarella.
4. Place tomatoes on a greased baking tray and drizzle a little olive oil over them.
5. Season with a pinch of salt and pepper.
6. Bake for 12 minutes or until golden brown.
7. Serve hot as a side dish or as a lunchtime main during summer.
