Sicilian lemon granita
Sicilian granita is the perfect refreshment on long summer days, and is so simple to make. With the perfect balance of sweet and sour, this traditional treat is a must-have during the summer months.
• 500 ml water
• 500 ml filtered fresh lemon juice
• 250g granulated sugar
1. To prepare the granita without an ice-cream maker, pour water into a medium saucepan and bring to the boil.
2. Add sugar and continue to cook until completely dissolved and the water is transparent.
3. Remove from heat and set aside to cool.
4. Combine lemon juice with cooled syrup and stir well using a whisk.
5. Transfer mixture to a plastic or metal container and cover. Freeze for 30 minutes.
6. Remove from freezer and stir briskly to create small ice crystals.
7. Return to freezer and repeat this process every 30 minutes for 2-3 times or until granita reaches the desired consistency.
