A tasty vegetarian recipe passed down through the generations.

 

 

• 3 zucchini (around 20 cm in length)
• 1 onion, chopped
• 1 egg
• 4 tbsp pecorino sardo
• Basil
• Breadcrumbs
• Oil for frying
• Salt and pepper

1. Preheat oven to 180˚C.
2. Cut the zucchini into 5 cm pieces and spoon the flesh out of each piece.
3. Chop the flesh and sauté it in oil.
4. In a separate pan, fry the onion in oil.
5. Combine onion and zucchini flesh in a bowl and add the egg, pecorino, basil and breadcrumbs. Season with salt and pepper and stir to create a solid mixture.
6. Fry the zucchini pieces in oil until brown. Drain on paper towel.
7. Place the zucchini pieces on a baking tray and season with salt. Fill each piece with the prepared mixture.
8. Sprinkle with breadcrumbs and bake until golden brown.
