Ghoraieb (almond flake cakes)

This is a recipe passed down by my Nonna Elisa, who was born in Egypt in 1860. These cakes made with almond flakes are popular in North Africa, Greece and Turkey.

 

 

• 300g plain flour
• 3 tbsp sugar
• 250g unsalted butter
• 50g almond flakes

1. Preheat oven to 180°C. Line a tray with baking paper.
2. In a large bowl, combine all the ingredients.
3. Take spoonfuls of the mixture to form small, round cakes. Place on the tray.
4. Bake for 15-20 minutes, checking occasionally to avoid burning.
