Mussel bruschetta
A refreshing dish inspired by the flavours of the ocean.
• 1 kg mussels
• 4 tomatoes, diced
• ½ red onion, chopped
• ½ cup white wine
• 2 garlic cloves, finely chopped
• 1 tbsp oil
• Oregano, chopped
• Chilli, chopped
• Basil, chopped
• Parsley, chopped
• Salt and pepper
1. Soak the mussels in water for at least an hour. Remove the beards, scrub the shells and clean thoroughly in plenty of cold water.
2. Place the mussels in a pan and add the wine. Cover and cook over high heat until the mussels open. Remove from heat and set aside.
3. Place the remaining ingredients in a large bowl. Drizzle with white wine and season with salt and pepper. Stir to combine.
4. Fill the mussels with the mixture.
5. Place the mussels in a baking dish and bake at 150°C for 20 minutes.
6. Finally, grill for 10 minutes.
7. Serve hot with a squeeze of lemon.
