Nannata (whitebait fritters)
My grandchildren and the rest of my family love these!
• 1 kg whitebait
• 1 ½ cups self-raising flour
• 3 eggs
• 2 tbsp parsley, finely chopped
• 1 tbsp garlic, finely chopped
• 1 tbsp chilli, finely chopped
• 1 tbsp lemon rind, grated
• Salt
• Water, as needed
• Oil
1. Place all of the ingredients in a large bowl and stir to combine. Set aside to rest for an hour.
2. Heat a small amount of oil in a pan and fry spoonfuls of the mixture until golden brown.
3. Serve with a squeeze of lemon juice. Enjoy!
