Prawn and avocado salad
A tasty starter for the festive season.
• 2 avocados, diced
• Juice of 1 lime
• 2 tbsp extra virgin olive oil
• 1 garlic clove, finely chopped
• 1 tbsp coriander leaves, finely chopped
• 2 tbsp parsley, finely chopped
• 400g prawns, in brine
• Salt
• Fresh ground pepper
• 1 pinch cayenne pepper
1. In a large bowl, combine the avocado, lime juice, oil, garlic, coriander, parsley and prawns. Season with salt, pepper and cayenne pepper.
2. Divide the salad into 4 glasses and serve immediately.
