Stuffed sardines
A seafood dish with a tasty filling.
• 24 sardines
• 1 egg
• Juice of 1 lemon
• 10 tbsp breadcrumbs
• 8 tbsp parmesan cheese
• 2 tbsp chopped parsley
• 2 garlic cloves, minced
• Olive oil
• Salt & pepper
1. Slit open the sardines, remove the spines and leave open.
2. Mix the remaining ingredients together in a large bowl.
3. Spoon the mixture over a sardine and place another sardine on top. Repeat with the remaining sardines.
4. Coat in flour and fry until golden.
5. Serve with wedges of lemon.
