Fried anchovies alla ligure
Anchovies are a specialty throughout the coastal territory of Liguria, a region which has always been devoted to fishing. This simple yet tasty dish is the flavours of the ocean all in one.
• 15 fresh anchovies, boned and innards removed
• 2 garlic cloves, finely chopped
• 1 bunch of finely chopped parsley
• Extra virgin olive oil, as needed
• Juice of 1½ lemon
• Salt, for seasoning
1. Rinse anchovies under running water. Lay them on top of each other over an upside-down cup so that they drain well.
2. Once drained, place anchovies in a large pan, add oil and lemon juice and sprinkle with garlic and parsley. Season with salt.
3. Place over a low flame and cover with a lid.
4. Cook for 10-15 minutes and serve while hot.
