Potato Croquettes

In the mood for something that packs a crunch? We've got you covered with these delicious potato croquettes!

-1.5 kg of red-skinned potatoes
-nutmeg
-gluten-free breadcrumbs
-2 eggs
-Parmigiano Reggiano
-salt
-oil for frying

1. Boil the potatoes in salted water. Once cooked, pass the potatoes through a potato masher. Add the Parmesan cheese and nutmeg, then mix.
2. When the mixture is lukewarm, add the eggs. Mix the dough well and, with the help of your hands, form the croquettes (not too large).
3. Roll them in breadcrumbs, making sure they are well coated.
4. In the meantime, heat plenty of oil in a pan.
5. When the oil is hot, fry the croquettes.
6. Once golden, the croquettes are ready. Drain them from the oil and place them on a sheet of absorbent paper. Serve hot!
