Stuffed chicken
This recipe is a real winter warmer.
• 1 whole chicken, cleaned
• ½ onion, diced
• 1 small carrot, diced
• Minced meat
• 2 chicken livers
• Olives
• 1 egg, beaten
• Breadcrumbs
• Oil
• Salt and pepper
• Parmesan
• 1 bay leaf
• White wine
• Rosemary
• Garlic
1. Heat oil in a pan and fry the onion, minced meat, chicken livers and carrot. Season with salt and pepper. Set aside to cool.
2. Add the egg, cheese and breadcrumbs. Stir to combine.
3. Stuff the chicken with the stuffing.
4. Place the chicken in a baking dish with the bay leaf, rosemary, white wine and garlic.
5. Bake in the oven for an hour.
6. Serve with a side of roast potatoes and capsicum.
