Vegan delight
A delicious vegetable dish from Molise.
• 2 cups fresh peas
• 2 cups fresh broad beans
• 6 artichokes
• 1 onion
• 400 ml water
• Extra virgin olive oil
• Salt
1. Heat the oil in a fry pan and cook the onion until browned.
2. Add the remaining vegetables and the water. Season with salt.
3. Simmer for an hour. Serve warm with some crusty bread.
