Almond biscuits
Sweet and crunchy, these almond biscuits will perfectly accompany a cup of tea or coffee...and all served with a cherry on top!
• 200g almonds, coarsely ground
• 200g caster sugar
• 1 egg white
• 15 candied cherries, halved
• Icing sugar, as needed
1. Work almonds, sugar and egg white with your hands to obtain a soft dough. If the dough is too sticky, coat your hands with flour.
2. Transfer dough to a piping bag and form the biscuits using a star-tipped nozzle.
3. Alternatively, shape the dough into little balls and press them lightly. Coat the biscuits in icing sugar and top each one with a cherry half.
4. Place biscuits on an oven tray lined with baking paper and set aside in fridge for 24 hours.
5. Bake at 180°C for no more than 10 minutes; any longer, and they will harden. The biscuits are ready when they turn a pale golden colour.
