Lavender biscuits

The aroma of lavender carries across the breeze in Liguria, and the plant is widespread across the region, used in many different specialties. These fragrant lavender biscuits are lightly sweetened, perfect for offering to guests with a hot drink. NB: The lavender spikes should be collected when they are still closed, and the purple colour of the flower is not yet visible.

 

 

• 180g flour
• 1 tsp baking powder
• 60g butter
• 50g sugar
• 1 egg yolk
• 2 tsp lavender flowers
• 1 pinch salt

1. Preheat oven to 230°C.
2. Line a tray with baking paper.
3. Sift flour into a large bowl and add baking powder, lavender and salt.
4. Separately, beat butter and sugar until fluffy.
5. Add egg yolk, stirring briskly.
6. Combine the two mixtures and work dough on a lightly floured surface until soft.
7. Roll dough out into a 5mm thick sheet and cut into biscuit shapes.
8. Place biscuits on tray and once in the oven reduce temperature to 200°C
9. Bake until golden brown.
10. Transfer onto a wire rack to cool completely.
