Neapolitan meatballs
This was one of my Nonna Maria’s favourite dishes to cook during the winter for my family, to warm our hearts.
• 1 kg minced meat
• 500g spinach
• 8 eggs
• 400g grated parmesan
• 1 tsp salt
• 1 chilli, grated
• 2 garlic cloves
• 400g breadcrumbs
• 500 ml vegetable oil
1. Put all the ingredients in the bowl and knead with your hands until combined well.
2. Take spoonfuls of mixture and roll them into balls. Place on a flat surface.
3. Heat the oil in a pan over low heat and cook the meatballs, rolling them around in the oil, until golden brown.
4. Place the meatballs on paper towels on a plate to absorb any excess oil. Serve with polenta on the side and enjoy!
