Consisting of just flour and water, strozzapreti are so fun to make and they take on any sauce! And the meaning of the name – “priest-stranglers” – is hilarious!

 

 

• 200g 00 flour
• 85-90g (approx.) water

1. In a mixing bowl, combine the flour and water. Knead to obtain a smooth dough.
Cover it in cling wrap and let it rest for 30 minutes.
2. After the dough has rested, roll it out with a rolling pin to a half-centimetre thickness.
Cut it into 1-1.5 cm strips.
3. Place the strips between the palms of your hands, roll it and tear it off into 7-8 cm pieces.
Repeat the process with the rest of the dough.
4. Dust the strozzapreti with flour to keep them from sticking together.
5. You can place them on a baking tray and freeze them or you can cook them in a pot of salted boiling water for approximately 2 minutes.
