Ciociara gnocchi

When done right, handmade gnocchi is the perfect family meal, and this meaty dish from the region of Lazio is no exception. With a tomato base and a meat sauce, this hearty meal is full of flavour, while the fresh gnocchi will melt in your mouth.

 

 

• 400g potatoes
• 250g flour
• 500g minced meat sauce (beef, chicken, pork and dried sausages) already cooked
• Salt, for seasoning
• Grated pecorino cheese, to serve

1. Boil potatoes in a large saucepan. Peel and mash once cooked. Set aside to cool.
2. Once cooled, mix potatoes with flour to create a soft compact dough.
3. With floured hands, take small amounts of dough and form rods about the width of a finger.
4. Cut into pieces about 2cm long and indent each using your finger or a fork.
5. Bring a large saucepan of salted water to the boil.
6. Drop the gnocchi into the water a few at a time.
7. As soon as the gnocchi rise to the surface, collect with a slotted spoon and arrange on a wooden tray or a dish.
8. Heat the previously prepared tomato and meat sauce. Pour over the gnocchi.
9. Sprinkle with plenty of pecorino.
