Mamma Anna’s cake
This cake is delicious served with a lovely cup of coffee. My mamma loves to dust the cake with icing sugar and decorate with dark chocolate bits.
• 2 cups self raising flour
• 1 cup caster sugar
• 250g melted unsalted butter
• 1 tsp vanillin sugar
• 4 tbsp thickened cream
• 3 eggs
• 3 tbsp dark chocolate, chopped
• 2 tbsp drinking chocolate/cocoa powder
• 1 pinch of salt
1. Preheat oven to 180˚C.
2. Beat the eggs, caster sugar and vanillin sugar until thick and fluffy.
3. Add the thickened cream and continue to beat until the mixture becomes creamy.
4. Add the drinking chocolate and chopped dark chocolate. Season with a pinch of salt and beat.
5. Continue to beat the mixture, adding the flour a little at a time.
6. Once all of the ingredients are mixed together, pour the mixture into a cake tin and bake for approx 55 minutes.
