Tiramisù
Tiramisù is one of Italy’s most famous gems when it comes to desserts. The perfect combination of bitter and sweet, this creamy cake is a worldwide favourite.
• 500g mascarpone cheese
• 300g savoiardi (lady fingers or sponge finger biscuits)
• 150g caster sugar
• 6 fresh egg yolks
• 4 tbsp Marsala wine
• 4 cups espresso coffee, diluted
• Cocoa powder
1. Beat egg yolks with sugar until light and frothy. Add the Marsala, then fold in the mascarpone and gently combine.
2. Allow the coffee to cool completely in a large bowl. Dip the savoiardi biscuits very quickly in the coffee. Line the base of a deep rectangular dish with slightly moistened biscuits.
3. Cover the savoiardi with a layer of the cream mixture. Repeat until all biscuits are used, finishing with a layer of cream.
4. Leave in fridge for at least an hour, or until ready to serve. Dust sifted cocoa powder evenly over the surface.
