Penne alla norcina
A true specialty of Umbria, this dish features one of the region's most renowned products: the norcia sausage. For those who love a creamy pasta, this meal will be sure to impress!
• 360g penne
• 450g Norcia sausages, peeled and chopped
• 220 ml fresh cream
• ½ onion, chopped
• 4 tbsp oil
• 1 cup white wine
• Grated truffles, to taste
• Salt and pepper, for seasoning
• Parmesan cheese, if desired
1. Heat oil in a large pan on medium heat. Cook onion and sausage until browned.
2. Deglaze with white wine and add cream. Season with salt.
3. Cook until mixture becomes creamy. Add truffle and season with pepper.
4. Meanwhile, cook pasta in a saucepan of salted boiling water. Drain once al dente.
5. Pour pasta into sauce, stirring to combine.
6. Sprinkle parmesan and truffle shavings over pasta to serve.
