Stuffed Celery Rolls

Having people over? Here's an impressive starter that your guests will love!

-1 large fresh celery
-100 g of veal
-100 g of pork loin
-50 g of cooked ham
-50 g of mortadella
-50 g of grated parmesan cheese
-2 eggs
-2 egg yolks
-oil
-salt

1. Choose the most tender stalks of celery, removing the leaves.
2. Wash the stalks and blanch them in salted water.
3. Drain them and lay them on a cloth to dry.
4. Mince all the meats and cold cuts, add the cheese and mix everything with the egg yolks and some salt.
5. Fill the celery stalks with the prepared filling and roll them lengthwise.
6. Flour them, secure them with a toothpick and dip them in lightly salted beaten eggs.
7. In a large pan, heat plenty of oil and fry the celery rolls, removing them when they are golden.
8. Dry them on paper towels and serve.
