Arancini di riso
The perfect dish for a dinner party.
• 500g rice
• 3 eggs, beaten
• 50g grated parmesan
• 100g ham
• 200g mozzarella
• Breadcrumbs
• Pepper
• Oil for frying
1. Cook the rice. Drain and set aside to cool.
2. Add the eggs, parmesan and pepper.
3. Place a spoonful of the rice mixture in the palm of your hand then add some ham and mozzarella. Close your hand to create a ball.
4. Coat the arancini in breadcrumbs. Cook in boiling oil.
