Rame di Napoli
If you love the combination of chocolate and pistachio, this traditional recipe from Naples can give you the right level of pleasure and transport you straight to Italy.
• 250g 00 flour
• 75g unsweetened cocoa powder
• 150g sugar
• 35g butter, melted
• 200g milk
• 1 egg
• 1 sachet yeast
• 1 sachet pure vanillin
For the coating:
• 100g dark chocolate, melted
• 200g crushed pistachios
1. Preheat oven to 180°C.
2. Sift the flour, cocoa powder, sugar, yeast and vanillin in a bowl.
3. Add the egg, milk and melted butter.
4. Mix everything gently until it becomes a thick cream.
5. Line a baking tray with baking paper and arrange spoonfuls of the mixture across the tray, leaving enough space between each one.
6. Bake for around 8 minutes, then remove from the oven and coat with the melted dark chocolate and chopped pistachios. Alternatively, when they come out of the oven, let them cool, dig the biscuit a little, and put in some thick orange marmalade, then make the topping.
7. Set aside to cool and dry.
